easy 2 ingredient pineapple cake recipe

Baking doesn’t have to be complicated. It can actually be really easy. It also doesn’t have to involve fancy ingredients. This cake recipe is actually even easier to make than the directions on the back of a box of cake mix.

I’ve been making this easy 2-ingredient cake since I was a teenager. I’ve even made this recipe when on vacation. All you need is access to an oven, an approximately 9″ by 13″ size baking pan and these two ingredients: a can of crushed pineapple and a box of cake mix.

This cake will take on a pineapple flavor due to the pineapple, which, if you like pineapple, that is a good thing. If you’ve ever had pineapple upside down cake (and I have a recipe for that too), this tastes similar but is much quicker and easier to make.

Warning: This cake is moist and delicious. Chances are you won’t have any leftovers.

Here’s the basic cake recipe:

2-Ingredient Pineapple Cake

Ingredients:

1 20-ounce can crushed pineapple in juice

1 box of cake mix, any flavor you like

Method:

Add the contents of the can of pineapple and the box of cake mix to a large bowl and stir until well combined.

Line a 9 x 11 inch baking pan with parchment paper or grease the pan well.

Add the cake mixture to the pan, spreading it evenly from end to end.

Bake according to the directions on the box.

Let cool for a half hour or more before removing from the pan.

Tips:

This cake is very moist and can be slightly difficult to cut and remove from the pan. That’s why I like to line the pan with parchment paper.

This is not the kind of cake you want to decorate with fancy frosting or fondant. It tastes better with whipped cream, ice-cream or fresh fruit.

You can use any flavor cake mix you want, but I would probably avoid chocolate. Chocolate and pineapple don’t sound like they’d taste all that great to me. I have made this cake before with white cake, yellow cake and even strawberry cake mixes, all of which were delicious.
